Matjes herring served with potatoes

Serves four.

  • 4 fillets of Swedish Matjes herring
  • 250gm potatoes
  • 1 onion
  • 100gm butter
  • 2 tablespoons of sour cream
  • 1 bunch chives
  • salt and white pepper to taste

Peel and slice potatoes and onion thinly. Melt the butter and add to the potato and onion to the mix.

Spread the mix into four small rounds and flatten them. Fry on a high temperature until the edges are golden brown. Turn the rounds over and fry until golden brown. Leave them to rest on a plate.

Drain the Matjes herring and put the fillets on to the fried potato cakes, add a dollop of sour cream and sprinkle some finely chopped chives on top.
